Marvellous Mirin

Mirin is a sweet cooking seasoning that has the consistancy of syrup. It has a dark amber color and is often used in Unagi sushi to give the eel its glossy appearance.

I sometimes use it to punch up chicken dishes or add a unique taste to my stir-frys.

It ingredients include corn syrup, fermented rice (or sake) and vinegar flavorings.

My favourite brand is made by Kikkoman. They also make great soy sauce products.

Important - Remember to keep opened bottles in the fridge. It should keep for about three months.

In addition to using it in your sushi recipes, you might want to try out this tasty chicken dish.

Mirin Chicken

Ingredients

  • 6 boneless chicken breasts
  • 1/3 cup of mirin
  • 1/4 cup soy sauce
  • 1 clove of garlic
  • 3 teaspoons of seasame oil

Method

  1. Combine and mix ingredients
  2. Place chicken in a plastic bag and pour in the sauce
  3. Shake the bag to coat the chicken
  4. Leave the chicken in the bag and let it marinate in the fridge for 2 hours
  5. Broil the chicken until it is cooked
