Marvellous MirinMirin is a sweet cooking seasoning that has the consistancy of syrup. It has a dark amber color and is often used in Unagi sushi to give the eel its glossy appearance. I sometimes use it to punch up chicken dishes or add a unique taste to my stir-frys. It ingredients include corn syrup, fermented rice (or sake) and vinegar flavorings. My favourite brand is made by Kikkoman. They also make great soy sauce products. Important - Remember to keep opened bottles in the fridge. It should keep for about three months.
