Sushi ingredients in a bottle

Mirin

Mirin is a sweet cooking seasoning that has the consistancy of syrup. It has a dark amber color and is often used in Unagi sushi to give the eel its glossy appearance. I sometimes use it to punch up chicken dishes.

Soy sauce (shoyu)

Shoyu is a light and delicate soy sauce is an ideal match for sushi. Don't use regular Chinese soy sauce as it will overpower the subtle flavours of sushi.

Su

Su is Japanese rice vinegar that is typically used to make sushi rice vinegar. White vinegar has a lot of acid and is very strong or sharp in taste. With the wide availability of Japanese vinegar there really is no need to use it. The Japanese variety (fermented rice) is very mellow tasting and best suited for your sushi rice.

Sake

Sake is a popular rice wine that can be enjoyed chilled or warmed. It is typically used when making sushi rice vinegar.

Dashi

Dashi soup stock can be made at home or purchased in powder form. Made from dried bonito flakes (sardines), this stock forms the basis of miso soup.

Ponzu Sauce

Ponzu sauce is made from the hard-to-find yuzu. It is a citrus that kind of looks like a small tangerine and has the color of the lemon. This is a refreshing substitute of soy sauce. Bottled ponzue sauce can be found in most Asian supermarkets.

Rayu - Spicy Sesame Seed Oil

Rayu is made by combining chili with seasame seed oil. Just a small drop can kick up a spicy tuna roll an extra notch.
